Easy and simple instant tomato pickle.... lets see step by step pictures....
2.Add the chopped tomatoes
3. Sprinkle some salt on the tomatoes and cover with lid
4.Open the lid, stir the tomatoes well
5.Now add the 2 tsp tamarind pulp or tamarind extract
6. Mix it well and cook for another 5 mins
7. Tempered ingredients
8. Heat oil in a kadai, add the mustard seeds
9.Once its splutter , add the urad dal, red chilly, crushed garlic cloves and few curry leaves
10. Now turn off the flame add the turmeric powder and 2 to 3 tsp red chilly powder
11. Then add the tempered items to the tomatoes
12. mix it well
13.Cook for 2 mins and turn off the flame
14. Tomato pickle is ready
Ingredients :
- Tomato - 5 to 7
- Crushed Garlic cloves - 7 to 8
- Tamarind paste - 2 tsp
- Red chilly powder - 2 to 3 tsp
- Turmeric powder - 1/4 tsp
- Oil - 2 tsp
- Salt as needed
For tempering :
- Oil - 3 tsp
- Mustard seeds - 1/2 tsp
- Urad dal - 1/4 tsp
- Red chilly 3 to 4
- Hing / asafoetida - 2 pinch
- Few curry leaves
Method :
- Wash and chop the tomatoes and keep them aside
- Soak 1 small piece tamarind in warm water to immerse it
- Heat 2 tsp oil in pan, add the chopped tomatoes with some salt
- Cover and cook the tomatoes for 10 to 15 min in medium flame
- Now open the lid, stir the tomatoes nicely
- Cook the tomatoes till it turn mushy and the pulp should be thicken
- The tomatoes absorb 80 % of water then add the tamarind paste and mix it well
- Mean while, heat 3 tsp oil in a pan,add mustard seeds once its splutter and urad dal,turmeric powder, garlic and fry till turn aromatic and add curry leaves
- Turn off the flame and add the red chilly powder
- Now mix the tempered items to the tomato puree and mix it well
- Stir it for 2 min and turn off the flame
Total time for cooking : 25 - 30 min
