Aloo Bhindi Poriyal - Potato / Lady's finger Poriyal.....

Ingredients:

  1. Potato - 3 Medium size
  2. Lady's finger - 10 
  3. Shallots - 10 OR Onion - 1 Medium size
  4. Tomato - 1 medium size
  5. Turmeric powder - 1/4 tsp
  6. Red chilly powder - 1 tbsp
  7. Salt to taste 

To Temper:

  1. Oil - 3 tsp
  2. Mustard seeds - 1/2 tsp
  3. Cumin / Jeera seeds - 1tsp
  4. Few curry leaves

Method:

  1. Wash and wipe lady's finger well with a clean towel.It will prevent the lady's finger from sticking while cooking.
  2. Wash and chop the onion and tomatoes.
  3. Heat oil in pan, saute the lady's finger for 5 - 7 mins and set aside.
  4. Heat oil in a kadai, add mustard seeds once its splutter add cumin seeds and curry leaves.
  5. Then add chopped onions and tomatoes along with turmeric powder.
  6. Once onion and tomatoes cooked, add the cubed potatoes, cover and cook the potatoes for 10 mins.
  7. Once potatoes half cooked add the lady's finger, red chilly powder and salt
  8. Stir in between to prevent it from getting burnt.Cook covered on low flame stirring from time to time until vegetable cooked.
  9. Delicious Aloo Bhindi poriyal is ready to serve.
