Capsicum Fried Rice :

Capsicum fried rice...




Ingredients:

  1. Red,Green,Yellow Capsicum / Bell peppers - 1 cup
  2. Cooked rice - 2 cups
  3. Onion - 1 chopped
  4. Green chilly - 1 chopped ( Optional )
  5. Soya sauce - 2 tsp
  6. Vinegar - 1 tsp
  7. Garlic cloves - 2 chopped
  8. Salt to taste

Method:

  1. Soak rice for 30 min then drain
  2. Add 2 to 3 cups of water , salt and few drops of oil and add the drained rice
  3. Cook in low flame without a lid
  4. Take care, not to overcook the rice.
  5. Each grain of rice should be separate
  6. Cool down the rice and keep the rice in freezer for 5 to 10 min ( It helps the rice be separate )
  7. Heat oil in kadai, add the garlic and green chilies saute it for min
  8. Add the onion ,bell peppers and stir well
  9. Cook for 2 min
  10. Add soya sauce, vinegar, salt, and pepper mix it well
  11. Then add the cooked rice and mix it well
  12. Cook for 2 - 3 min
  13. Serve it hot
