Capsicum fried rice...

Ingredients:
- Red,Green,Yellow Capsicum / Bell peppers - 1 cup
- Cooked rice - 2 cups
- Onion - 1 chopped
- Green chilly - 1 chopped ( Optional )
- Soya sauce - 2 tsp
- Vinegar - 1 tsp
- Garlic cloves - 2 chopped
- Salt to taste
Method:
- Soak rice for 30 min then drain
- Add 2 to 3 cups of water , salt and few drops of oil and add the drained rice
- Cook in low flame without a lid
- Take care, not to overcook the rice.
- Each grain of rice should be separate
- Cool down the rice and keep the rice in freezer for 5 to 10 min ( It helps the rice be separate )
- Heat oil in kadai, add the garlic and green chilies saute it for min
- Add the onion ,bell peppers and stir well
- Cook for 2 min
- Add soya sauce, vinegar, salt, and pepper mix it well
- Then add the cooked rice and mix it well
- Cook for 2 - 3 min
- Serve it hot
