Maa Inji Urugai / Mango Ginger pickle - Maa Inji recipes :

Maa Inji urugai....

Ingredients :

  1. Mango ginger / Maa Inji - 100 gm - 1 cup chopped
  2. Lemon juice - 1 big lemon ( extract the juice )
  3. Green chilies - 10 finely chopped 
  4. Salt to taste.

To Temper :

  1. Gingely oil OR oil - 3 tbsp
  2. Mustard seeds - 1/2 tsp
  3. Urad dal - 1/2 tsp
  4. Hing - a pinch 
  5. Few curry leaves 

Method :

  1. Wash and peel the skin of mango ginger.
  2. Chop into small round shape. ( Also chop it finely )
  3. Finely chopped the green chilies. ( Add the green chilly depending your upon taste )
  4. Heat oil in a kadai, add the mustard seeds once its splutter add the urad dal.
  5. Then Pinch a hing powder.
  6. Add the chopped green chillies and few curry leaves saute it for 3 - 4 mins.
  7. Now add the chopped mango ginger and saute for a min.
  8. Then add the lemon juice and salt.
  9. Let's cook for 5 - 10 mins.
  10. Turn off the flame.
  11. Let's cool down completely.
  12. Store in a jar and use for 10 - 15 days.
  13. Serve with curd rice.

1. Heat oil in a kadai, add the mustard seeds once its splutter add the urad dal and a Pinch a hing powder.

2. Add the chopped green chillies and few curry leaves saute it for 3 - 4 mins.


3. Now add the chopped mango ginger and saute for a min.

4. Extract the lemon juice from 1 big lemon.

5.Then add the lemon juice and salt.

6.Let's cook for 5 - 10 mins and Turn off the flame.
