Mutton Biryani : Version - 1

Tasty and simple mutton biryani....


Ingredients :

  1. Mutton - 1 and 1 /2 kg
  2. Rice - 1 kg
  3. Ginger garlic paste - 2 tbsp
  4. Onion - 2 large sliced
  5. Tomato - 3 large sliced
  6. Green chilly - 5 - 7 
  7. Mint leaves - 1/2 cup
  8. Coriander leaves - 1/2 cup
  9. Turmeric powder - 1/4 tsp
  10. Red chilly powder - 1 tbsp
  11. Biryani masala powder - 2 tbsp
  12. Garam masala powder - 1/2 tsp
  13. Cumin powder - 1/2 tsp
  14. Bay leaf - 2 - 3
  15. Cinnamon - 1 long stick
  16. Star anise - 1 
  17. Cloves - 3 - 5
  18. Ellakai / Cardamon - 2
  19. Mace - 2
  20. Fennel seeds - 1 tsp
  21. Ghee - 1 tbsp 
  22. Oil - 2 tbsp
  23. Salt to taste 
  24. Lemon juice - 1 tbsp

Mutton :

  • Mutton - 1 and 1 /2 kg
  • Turmeric powder - 1/2 tsp
  • Salt - 1/2 tsp
  • In pressure cooker, add the mutton, turmeric powder and salt.Cook the mutton for 10 - 15 whistle.switch off and turn aside.

Rice Measurement :

  1. Normal Rice - 1 cup                                                                                                                                    Soak the rice for 15 - 20 min add 1 1/2 cup f water for 1 cup of Rice
     2. Seeraga Samba Rice - 1 cup
         Soak the rice for 5 min , add 1 3/4 cup of water for 1 cup of rice
   
     3. Basmati Rice - 1 cup
         Soak the rice for 15 min, add 1.5 cups of water for 1 cup of rice.

Method :

  1. Wash rice in cold water for 2  - 3 times, soak in cold water for 20 - 2 - 5 mins. 
  2. Heat ghee and oil in heavy bottom pan, add the whole spices one by one - bay leaf, cinnamon, cardamon, cloves and star anise, cook for 1 min.
  3. Add the ginger garlic paste saute till raw smell goes.
  4. Then add the sliced onions, saute for 3 - 4 mins they have a golden tint.
  5. Add the green chilies and tomato sprinkle some salt and saute.
  6. Cook covered for 3 mins and wait until its cooked and mushy.
  7.  Add the mint leaves and coriander leaves, cook for 1 min.
  8. Now add the spice powders - red chilly powder, biryani masala powder, jeera powder, turmeric powder and garam masala powder and mix well.
  9. Now add the cooked mutton and saute for 2 - 3 mins.
  10. Add 2 and half cups of water for 2 cup rice.bring this to a boil.
  11. Drain the soaking rice and once the water is boiling add the rice.mix well, check the salt and spices.
  12. Cover and cook for 10 - 15 mins in medium flame.
  13. Now open the lid, mix the rice gently.
  14. Lower the flame and place a dosa shillet and keep the biryani pan over it and keep any weight.
  15. Cook further in simmer for 8 - 10 mins.switch off.
  16. After 10 mins open the pan and sprinkle the lemon juice.
  17. Serve hot along with raita.
