Vegetable Biryani : Version - 1

Tasty Vegetable biryani......


Ingredients :

  1. Carrot, beans, cauliflower, beetroot, potato - 1 cup ( Mixed Vegetables - 1 cup)
  2. Ginger garlic paste - 1 tbsp
  3. Onion - 2 sliced
  4. Tomato - 2 big 
  5. Green chilly - 4 - 5 
  6. Mint leaves - 1/2 cup
  7. Coriander leaves - 1/2 cup
  8. Biryani masala powder- 1 tbsp
  9. Garam masala powder - 1 tsp
  10. Jeera powder - 1/2 tsp
  11. Oil - 2 tbsp
  12. Ghee - 1 bsp
  13. Bay leaf - 2 - 3 
  14. Cinnamon stick - 2 small pc
  15. Star anise - 1
  16. Cloves - 5
  17. Ellakai /Green cardamon - 2 
  18. Salt to taste

Rice Measurement :

  1. Normal Rice - 1 cup                                                                                                                 Soak the rice for 15 - 20 min add 1 1/2 cup f water for 1 cup of Rice
     2. Seeraga Samba Rice - 1 cup
         Soak the rice for 5 min , add 1 3/4 cup of water for 1 cup of rice
   
     3. Basmati Rice - 1 cup
         Soak the rice for 15 min, add 1.5 cups of water for 1 cup of rice


Method :

  1. Wash and Soak the rice in water for 20 - 30 mins.
  2. Peel and chop the onion, tomato, green chilies and keep aside.
  3. Clean and chop the coriander leaves and mint leaves and keep aside.
  4. Heat oil and ghee in heavy bottom kadai, add the bay leaf, cinnamon, cardamon,cloves and star anise. Saute it for a min.
  5. Add onion, ginger garlic paste and saute until onion becomes soft.
  6. Now add the tomatoes and green chilies, mix well cover and cook the tomatoes gets smashed.
  7. Once tomato gets smashed add the chopped vegetables saute it well. cover and cook for 5 - 7 mins.
  8. Add mint leaves and coriander leaves, saute it for 2 mins.
  9. Then add the biryani masala powder, garam masala powder and jeera powder,mix it well.
  10. Now add the 2 cups of water for 1 and 1/2 cup rice. Add required salt.
  11. Once its boil add the soaked rice and mix it well.
  12. Cover with lid.
  13. It took 15 - 20 mins.
  14. Once water absorb, put the flame in simmer and cover the kadai with the cotton cloth and cover the lid.
  15. Cook the biryani in low flame for 10 - 15 mins
  16. And turn off the flame.
  17. Then live it for 10 mins.
  18. Serve Vegetable biryani with onion raita.
