Egg Kurma / Mutta kurma recipe :

Egg kurma is one such delicious ,creamy flavorful one which goes very well with rotis, appam, and parottas....

 Ingredients  :

  1. Egg - 5 - 8
  2. Big Onion - 2 (sliced)
  3. Big Tomato - 2 (chopped)
  4. Green chilly - 3 - 5 (slit)
  5. Ginger - garlic paste  or  crushed ginger garlic - 2 tsp
  6. Salt to taste 
  7. Few coriander leaves 

Spice powders :

  1. Red chilly powder - 1 tbsp
  2. Coriander powder - 1 tbsp
  3. cumin powder - 1/2 tbsp
  4. Pepper powder - 1 tsp

For Tempering :

  1. Oil - 3 tsp
  2. Bay leaf - 3 
  3. Cinnamon - 2 
  4. Star anise - 1 
  5. Cloves - 3

For grinding :

  1. Coconut - 1/2 cup 
  2. Fennel seeds - 1/2 tsp
  3. Grind and make a smooth paste

Method :

For egg :

  • Boil the eggs and remove the shell and make slits on the top and bottom.
  • Heat oil in pan, add 1/2 tsp turmeric powder and 1/2 tsp chilly  powder.
  • Then add boiled egg, saute it for 2 - 3 min.
  • Remove from the flame.

For Egg kurma :

  1. In same pan, add 3 tbsp oil. add the tempered ingredients and saute it for min.
  2. Add the crushed ginger garlic paste, saute till raw smell goes.
  3. Now add the onions and green chilies, saute till turns golden brown.
  4. Then add all the spice powders and fry for 2 to 3 mins.
  5. Add the tomatoes and cook till turns mushy.(3 mins)
  6. Now add one cup of water and salt. let's boil for 5 to 8 mins.Cover with lid.
  7. In a mean time make a smooth paste of coconut .
  8. Now add the coconut paste to the curry.
  9. Now bring flame to simmer and cook for another 5 to 7 mins.
  10. Then add the slit eggs and 1/2 tsp pepper powder and cook for 2 mins.Garnish with coriander leaves and turn off the flame.
  11. Serve hot with tiffen.
