Egg kurma is one such delicious ,creamy flavorful one which goes very well with rotis, appam, and parottas....
Ingredients :
- Egg - 5 - 8
- Big Onion - 2 (sliced)
- Big Tomato - 2 (chopped)
- Green chilly - 3 - 5 (slit)
- Ginger - garlic paste or crushed ginger garlic - 2 tsp
- Salt to taste
- Few coriander leaves
Spice powders :
- Red chilly powder - 1 tbsp
- Coriander powder - 1 tbsp
- cumin powder - 1/2 tbsp
- Pepper powder - 1 tsp
For Tempering :
- Oil - 3 tsp
- Bay leaf - 3
- Cinnamon - 2
- Star anise - 1
- Cloves - 3
For grinding :
Method :
For egg :
- Boil the eggs and remove the shell and make slits on the top and bottom.
- Heat oil in pan, add 1/2 tsp turmeric powder and 1/2 tsp chilly powder.
- Then add boiled egg, saute it for 2 - 3 min.
- Remove from the flame.
For Egg kurma :
- In same pan, add 3 tbsp oil. add the tempered ingredients and saute it for min.
- Add the crushed ginger garlic paste, saute till raw smell goes.
- Now add the onions and green chilies, saute till turns golden brown.
- Then add all the spice powders and fry for 2 to 3 mins.
- Add the tomatoes and cook till turns mushy.(3 mins)
- Now add one cup of water and salt. let's boil for 5 to 8 mins.Cover with lid.
- In a mean time make a smooth paste of coconut .
- Now add the coconut paste to the curry.
- Now bring flame to simmer and cook for another 5 to 7 mins.
- Then add the slit eggs and 1/2 tsp pepper powder and cook for 2 mins.Garnish with coriander leaves and turn off the flame.
- Serve hot with tiffen.
