South Indian famous Brinjal puli kulambu.....
Ingredients :
- Brinjal / Kathirikai - 5 Chopped
- Onion - 2 finely chopped
- Garlic cloves - 5
- Coconut paste - 1 cup
- Thatta payaru - 1/2 cup (optional)
- Tamarind paste - 3 tsp
- Sambar powder - 2 tbsp
- Homemade kulambu powder - 2 tbsp
- Turmeric powder - pinch
- Salt to taste
To temper :
- Heat oil in a kadai, add mustard seeds once its splutter add urad dal and few curry leaves.
- Then add the chopped onions and garlic, saute until browned.
- Now add the brinjals and thatta payaru,saute for 3 mins.
- Make sure add the tamarind juice only after brinjal cooked.
- Add tamarind pulp once brinjal become soft, allow it to boil.
- Grind the coconut paste with little water,\.
- Then add the coconut paste and mix it well.
- Add the sambar powder, turmeric powder, kulambu powder and salt.mix it well.
- Allow it to boil few more mins until it reaches a thick consistency and oil separating.
- Turn off the flame.
