Vegetable Chutney - Mixed Vegetable Chutney Recipe for Idly, Dosa:

Ingredients :

  1. Carrot - 1, cauliflower - 1 cup, beans - 1 cup  (You can use cabbage, chow chow, capsicum, brinjal too)
  2. Onion - 1 
  3. Green chilly - 3 - 4
  4. Garlic cloves  - 4
  5. Ginger - 1 small pc
  6. Tomato - 1 
  7. Turmeric powder - 1/4 tsp
  8. Sugar - 1 tsp
  9. Tamarind pulp - 1 tbsp
  10. Coriander leaves - one handful
  11. Salt to taste 
  12. Oil - 1 tbsp

For Temper :

  1. Oil - 1 tbsp
  2. Mustard seeds - 1/2 tsp
  3. Urad dal - 1/2 tsp
  4. Jeera - 1 tsp
  5. Red chilly - 1
  6. Asafoetida / Hing - a pinch
  7. Few curry leaves

Method :

  1. Wash and chop the vegetables.
  2. In a pan , add 1 glass of water and add the vegetables, cover and cook for 5 - 10 mins in medium flame.
  3. Heat oil in a kadai, saute ginger and garlic cloves till turn golden brown.
  4. Then add the onions, green chilly and turmeric powder saute it for a min.
  5. Now add the chopped tomatoes and saute for couple of mins.
  6. Now add the cooked vegetables along with water and mix it well.
  7. Add sugar and mix it well.
  8. Cook the vegetables till water absorb.
  9. Once vegetables cooked turn off the flame and cool down completely.
  10. In a jar, put the vegetable mixer, tamarind pulp, coriander leaves and salt. grind it in a coarse paste or smooth paste.
  11. Heat oil in a kadai, add mustard seeds once it splutter add urad dal, jeera, red chilly, hing and curry leaves.
  12. Transfer to the chutney and mix it well.
  13. Serve with idly , dosa.
