Vegetable Chutney - Mixed Vegetable Chutney Recipe for Idly, Dosa

Ingredients :
- Carrot - 1, cauliflower - 1 cup, beans - 1 cup (You can use cabbage, chow chow, capsicum, brinjal too)
- Onion - 1
- Green chilly - 3 - 4
- Garlic cloves - 4
- Ginger - 1 small pc
- Tomato - 1
- Turmeric powder - 1/4 tsp
- Sugar - 1 tsp
- Tamarind pulp - 1 tbsp
- Coriander leaves - one handful
- Salt to taste
- Oil - 1 tbsp
For Temper :
- Oil - 1 tbsp
- Mustard seeds - 1/2 tsp
- Urad dal - 1/2 tsp
- Jeera - 1 tsp
- Red chilly - 1
- Asafoetida / Hing - a pinch
- Few curry leaves
Method :
- Wash and chop the vegetables.
- In a pan , add 1 glass of water and add the vegetables, cover and cook for 5 - 10 mins in medium flame.
- Heat oil in a kadai, saute ginger and garlic cloves till turn golden brown.
- Then add the onions, green chilly and turmeric powder saute it for a min.
- Now add the chopped tomatoes and saute for couple of mins.
- Now add the cooked vegetables along with water and mix it well.
- Add sugar and mix it well.
- Cook the vegetables till water absorb.
- Once vegetables cooked turn off the flame and cool down completely.
- In a jar, put the vegetable mixer, tamarind pulp, coriander leaves and salt. grind it in a coarse paste or smooth paste.
- Heat oil in a kadai, add mustard seeds once it splutter add urad dal, jeera, red chilly, hing and curry leaves.
- Transfer to the chutney and mix it well.
- Serve with idly , dosa.
