Medu Vadas are traditionally South Indian dish which can be served as a main course , side dish or snack. This crispy deliciousness made with urad dal batter. Served with sambar, chutneys and payasam.
Methu Vada |
Ingredients:
- Urad dal -1 cup
- Onions - 2 finely chopped
- Green chilly - 3 finely chopped
- Pepper Corns- 1tsp
- Rice flour - 3 tsp ( Add rice flour it will not absorb too much oil)
- Few curry leaves
- Few coriander leaves
- Salt to taste
- Oil as Required
Urad dal Batter Method:
- Soak the urad dal for 4 to 5 hours. you could also soak these for overnight.
- Drain and grind the urad dal to a smooth batter, don't add more water while grinding, just sprinkle the water.
Notes:
- If medu vada batter is too thick, the vada will shape nicely nut they will be hard inside after frying.
- If batter is too soft, it will not be hold the shape and will absorb too much oil.
- It's the consistency of the batter that determines how soft and shapely vadas turn outs.

Take all the Ingredients |
In a blender, put the urad dal |
Make a smooth batter |
Mix all the Ingredients |
Add rice flour |
Mix like this |
Wet your hand. Take a portion of mixture in your hand. Give it a round shape.make a hole in the center with your thumb. |
Heat oil in a kadai, up turn your hand and drop the vada in oil |
Deep fry the vada till both sides turn golden brown in color |
Serve hot with chutney and sambar.. Have with payasam to |
