Hotel style Veg kurma (Mixed Vegetable kurma) recipe :

Mix veg sabzi or mix vegetables kurma in restaurant style....Tastes super delicious...

Ingredients :

  1. Mixed vegetables (Carrot, beans, potatoes and capsicum ) -1 cup
  2. Onion - 2 
  3. Tomato - 1 medium sized
  4. Green chilly - 1 
  5. Garam masala - 1 tsp
  6. Red chilly powder - 1 tsp
  7. Coriander powder - 1/2 tsp
  8. Turmeric powder - 1 pinch
  9. Few coriander leaves 
  10. Salt to taste

To Grind :

  1. Coconut - 1/2 cup
  2. Fennel seeds - 1 tsp
  3. Pepper corns - 1/2 tsp
  4. Ginger - 1 small pc

To Temper :

  1. Oil - 3 tsp
  2. Bay leaf - 2
  3. Cinnamon - 1 small stick
  4. Cardamon / Ellakai - 2 pcs
  5. Cloves - 2 
  6. Star anise - 1
  7. Jeera - 1 tsp

Method :

  1. First grind the ingredients listed under 'to grind' with little water to a fine paste, set aside
  2. Chop the Vegetables
  3. Heat oil in kadai, add the under 'to temper' and saute it for min
  4. Add the onion saute well until slightly browned
  5. Then add the tomatoes saute it well till it turns mushy 
  6. Now add the chopped vegetables and mix it well
  7. Cover and cook the vegetables for 5 to 7 min
  8. Now open the lid , add the red chilly powder, coriander powder, turmeric powder and garam masala powder and mix it well
  9. Saute for 1 min 
  10. Now add 1 glass water and salt and cover it for 5min
  11. Then add the coconut paste , 3/4 cup of water and allow it boil for 5 min in medium flame
  12. Finally add the chopped coriander leaves and turn off the flame
  13. Serve it hot with rotis.
