Tasty Vegetable biryani......
Ingredients :
- Carrot, beans, cauliflower, beetroot, potato - 1 cup ( Mixed Vegetables - 1 cup)
- Ginger garlic paste - 1 tbsp
- Onion - 2 sliced
- Tomato - 2 big
- Green chilly - 4 - 5
- Mint leaves - 1/2 cup
- Coriander leaves - 1/2 cup
- Biryani masala powder- 1 tbsp
- Garam masala powder - 1 tsp
- Jeera powder - 1/2 tsp
- Oil - 2 tbsp
- Ghee - 1 bsp
- Bay leaf - 2 - 3
- Cinnamon stick - 2 small pc
- Star anise - 1
- Cloves - 5
- Ellakai /Green cardamon - 2
- Salt to taste
Rice Measurement :
- Normal Rice - 1 cup Soak the rice for 15 - 20 min add 1 1/2 cup f water for 1 cup of Rice
2. Seeraga Samba Rice - 1 cup
Soak the rice for 5 min , add 1 3/4 cup of water for 1 cup of rice
3. Basmati Rice - 1 cup
- Wash and Soak the rice in water for 20 - 30 mins.
- Peel and chop the onion, tomato, green chilies and keep aside.
- Clean and chop the coriander leaves and mint leaves and keep aside.
- Heat oil and ghee in heavy bottom kadai, add the bay leaf, cinnamon, cardamon,cloves and star anise. Saute it for a min.
- Add onion, ginger garlic paste and saute until onion becomes soft.
- Now add the tomatoes and green chilies, mix well cover and cook the tomatoes gets smashed.
- Once tomato gets smashed add the chopped vegetables saute it well. cover and cook for 5 - 7 mins.
- Add mint leaves and coriander leaves, saute it for 2 mins.
- Then add the biryani masala powder, garam masala powder and jeera powder,mix it well.
- Now add the 2 cups of water for 1 and 1/2 cup rice. Add required salt.
- Once its boil add the soaked rice and mix it well.
- Cover with lid.
- It took 15 - 20 mins.
- Once water absorb, put the flame in simmer and cover the kadai with the cotton cloth and cover the lid.
- Cook the biryani in low flame for 10 - 15 mins
- And turn off the flame.
- Then live it for 10 mins.
- Serve Vegetable biryani with onion raita.
