Spinach has more health wonders that are absent in fruits and vegetables.Spinach is an excellent source of vitamin K, vitamin A ,manganese, fol-ate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium, and vitamin C. It is a very-good source of dietary fiber, phosphorus, vitamin B1, zinc, protein.Dark leafy greens like spinach are important for skin and hair, bone health, and provide protein, iron, and minerals.

Keerai Poriyal Recipe

Ingredients:
- Agathi keerai / அகத்திகீரை - 1 bowl (medium size)
- Murangai keerai / Drumstick leaves/முருங்கைகீரை - 1 bowl (medium size)
- Small onion / shallots - 10 - 15
- Red chilly - 2
- Grated coconut - 2 tbsp
- Mustard seeds - 1/2 tsp
- Oil - 1 tbsp
- Few curry leaves
- Salt to taste
- Sugar - 1/4 tsp (optional)
Method:
- Pluck drumstick leaves from stems and rinse well 4-5 times in water.
- Heat oil in a pan, add mustard seeds once its splutter add red chilly and curry leaves.
- Now add the shallots saute till translucent color.
- Add the drumstick leaves and add salt and sugar. Adding sugar retains color and also balance the bitterness of the drumstick leaves.
- Keep stiring to mix the salt for a minute, it will leave water, which helps in cooking the greens. Cook in low flame for 5 minutes. The volume will reduce as it is cooking.
- Add coconut and mix well, cook for another minute and off flame.
- Healthy and delicious drumstick and agathi keeerai leaves is ready to serve.
Note:
- You can skip any one of spinach.
- Adding sugar helps retaining the green color.
- Small onions|shallots enhance the taste of the poriyal.
