Hotel Style Tiffen sambar / Tiffen sambar recipe

Ingredients :
- Split Yellow Moong dal - 1/2 cup
- Potato - 2
- Carrot - 1
- Shallots / small onion - 10 - 15
- Tomato - 1 medium size
- Green chilly - 1
- Jaggery - 1 small piece
- Tamarind pulp - 1/2 tbsp
- Salt to taste
To Dry Roast & Grind :
- Channa dal / Kadala paruppu - 2 tbsp
- Coriander seeds - 2 tbsp
- Red chilly 2 - 3
- Store this powder in air tight container
To Temper :
- Oil - 1/2 tbsp
- Ghee - 1 tbsp
- Mustard seeds - 1/2 tsp
- Urad dal - 1/2 tsp
- Jeera / Cumin - 1 tsp
- Asafoetida / Hing - a pinch
- Few curry leaves
Method :
- In a pan, dry roast the coriander seeds, channa dal and red chilly in medium flame , till nice aroma comes.
- Let's cool down completely and make a fine powder and set aside.
- Dry roast the moong dal till nice aromo comes and cool down completely.
- Pressure cook the moong dal with enough water for 4- 5 whistles until is mushy.
- Smash it well with laddle, set aside.
- Heat oil in a kadai, add the onions, tomato and green chilly, saute it till raw smell goes.
- Then add the veggies with turmeric powder and cook for 3 - 5 mins in medium flame.
- Then transfer this to cooked dal with 1 cup of water and salt.
- Add 1 tbsp dry roast powder and tamarind pulp, mix it well.
- Then add jaggery, allow the sambar to boil thicken.
- Once its reach desired consistency, In a kadai, heat oil and ghee, add the mustard seeds once its splutter add urad dal, jeera, hing and curry leaves.
- Transfer this to sambar and mix it well.
- Finally add the coriander leaves and turn off the flame.
- Serve hot with Idly / Dosa.
