Instant Mango Pickle

Ingredients :
- Mango - 1 medium size
- Mustard seeds - 1 tbsp
- Red chilly powder - 1 tbsp
- Fenugreek seeds - 1/4 tsp
- Turmeric powder - a pinch
- Asafoetida / Hing - 1/4 tsp
- Salt to taste
- Gingelly oil - 2 tbsp
To Grind :
- Mustard seeds - 1 tbsp
Method :
- Clean and cut the mango in small pieces.
- In a blender, grind the mustard seeds in a coarse powder.
- Heat oil in a pan for few seconds,add turmeric powder and asofoetida, give a quick mix and turn off the flame.
- In a mixing bowl, add the red chilly powder, fenugreek seeds and salt. mix it well
- Now add the hot oil to the bowl and mix it well.
- Add the 2 tsp of mustard powder to the mixture and mix it well.
- Finally add the chopped mango amd mix well.
- Let it rest for overnight.
- Serve with curd rice.
