Omapodi Recipe - Plain Sev / Easy snacks :

Omapodi is a traditional south Indian snack that is prepared during the festival of Diwali. Plain sev, crispy string kind of addictive snack that all foodies love as topping of chats.

Ingredients :

  1. Kadalai Mavu ( Besan / Chickpea flour ) - 1 cup
  2. Rice flour  - 1/4 cup
  3. Omam / Ajwain / carom seeds - 1/2 tbsp
  4. Turmeric powder - 1/8 tsp (Optional)
  5. Hot oil - 2 tsp
  6. Butter - 1 tbsp
  7. Salt to taste
  8. Water to Knead
  9. Oil - for deep frying

Note :

  1. Be very careful while adding water as the dough consistency is very important. Do not let the dough rest for more time as it will get dry and pressing will be very difficult.
  2. If it takes time then cover the dough with a wet cloth. Still if its difficult to press through, then sprinkle a little water to loosen the dough but very little.
  3. I prefer using hot oil as the sev remains crisp. But use either ghee or softened butter.
  4. Always start kneading the dough after you have put the oil for heating in a pan, this way the omapodi or sev will maintain the golden yellow color instead of darkening.
  5. Make sure that the temperature of the oil in uniform and not over hot. Else the sev will darken.
  6. Always store in an air tight container or preferably a zip lock bag to maintain the freshness and crispness.
  7. I do not use turmeric powder for making omapodi, hence given it as optional.

Method :

  1. Dry roast the omam / ajawin in a pan for 1 min.The grind or pulse the omam in a mixer jar to a coarse powder.
  2. Soak this in 1/8 cup of hot water for 15 mins.
  3. Sieve besan flour and rice flour.
  4. In a mixing bowl, add the rice flour, rice flour, turmeric powder (if using ), ajwain water, hot oil, butter and salt.
  5. Add water little by little to form a soft sticky dough.
  6. Heat oil in a kadai, grease the murukku mould with oil and fit the multi fine holed nozzle.
  7. Fill the mould with the prepared dough.check the temperature of the oil by putting a pea sized dough.
  8. If it rises to the top immediately, the temperature is correct.
  9. Squeeze the dough in a circular motion directly into the hot oil.
  10. Once it is cooked on one side turn over to another side and cook till bubbles.repeat this process for the rest of the dough.
  11. Drain in tissue paper, cool down and store in an airtight container.
  12. Enjoy it with tea / Coffee.
