This delicious bhuna potato roast is easy to make which means it is perfect for curd rice. The thick, medium-hot, sauce made from a tasty blend of flavorings and vegetables perfectly coats with masala. If you want to increase the heat of this yummy curry simply add more chilies. You could also make a non - vegetarian version by replacing the potato with a selection of chicken, egg, etc.

Bhuna Potato Roast - Bhuna Masala Potato Roast Recipe
Cooking Time : 20 mins
Ingredients :
- Boiled Potato - 4 OR Baby Potatoes 8 - 10
- Bhuna Masala - 1 1/2 tbsp
- Crushed Garlic - 5 - 7 cloves
- Jeera / Cumin Seeds - 1 tbsp
- Mustard seeds - 1/2 tsp
- Few curry leaves
- Few coriander leaves
- Asafoetida / Hing - a pinch
- Salt to taste
- Oil - 1 tbsp
Method :
- First clean and wash the potatoes.
- In a pressure cooker, cook the potatoes for 2 whistles with salt.
- Remove the potato from the cooker, let cool down completely.
- Peal the skin from the potatoes, set aside.
- Heat oil in a kadai, add mustard seeds once its splutter add cumin seeds, hing and curry leaves , saute it for few sec.
- Add the crushed garlic cloves, saute it till color change.
- Then add the boiled potatoes, mix it well for amin.
- Add the bhuna masala paste to the potato and saute it well for few mins.
- Finally add the chopped coriander leaves and turn off the flame.
- Serve with curd rice / rasam sadam.
