Chettinad Mushroom Kuzhambu Recipes :

Spicy Chettinad mushroom Kuzhambu.....Tried this curry with own blend chettinad spices...


Ingredients :

  1. Mushroom - 1 cup
  2. Onion - 2 Sliced
  3. Tomato - 2 Chopped
  4. Mustard seeds - 1/2 tsp
  5. Urad dal - 1/2 tsp
  6. Few curry leaves
  7. Few coriander leaves
  8. Salt to taste
  9. Oil as required

To Roast and Grind :

  1. Grated coconut - 1 cup
  2. Cloves - 3
  3. Cinnamon / Pattai - 2 pcs
  4. Coriander seeds - 1 tsp
  5. Cardamom / Ellakai - 2

To Grind :

  1. Ginger - 2 small pc
  2. Garlic - 8 cloves
  3. Sesame seeds - 2 tsp 
  4. Cashew - 8 pcs or poppy seeds - 1tsp


Soak and Grind :

  1. Soak sesame seeds in water for 5 min
  2. Soak or boil red chilly in water and grind. It will give thick red color

Method:

  1. Clean the mushroom and cut them into pieces and keep aside
  2. Dry roast each ingredient ( Cinnamon stick,cloves, coriander seeds, coconut and cardamon) in medium flame.
  3. Combine all the dry roasted items with ginger, garlic, red chilly paste, cashew and sesame seeds and grind to make a fine paste and keep aside
  4. Now heat oil in kadai, add mustard seeds, urad dal and curry leaves, once its splutter add onions saute foe few min
  5. Then add tomatoes , cover and cook for 2 to 3 min , then add some salt
  6. Now add the ground masala , keep frying till the masala turns golden brown.
  7. Then add the mushroom and 1 cup of water and salt. cook in medium flame
  8. Let it boil for 15 - 20 min till oil separates
  9. And switch off the flame and garnish with coriander leaves
  10. Serve hot with tiffen
