Mix veg sabzi or mix vegetables kurma in restaurant style....Tastes super delicious...
Ingredients :
- Mixed vegetables (Carrot, beans, potatoes and capsicum ) -1 cup
- Onion - 2
- Tomato - 1 medium sized
- Green chilly - 1
- Garam masala - 1 tsp
- Red chilly powder - 1 tsp
- Coriander powder - 1/2 tsp
- Turmeric powder - 1 pinch
- Few coriander leaves
- Salt to taste
To Grind :
- Coconut - 1/2 cup
- Fennel seeds - 1 tsp
- Pepper corns - 1/2 tsp
- Ginger - 1 small pc
To Temper :
- Oil - 3 tsp
- Bay leaf - 2
- Cinnamon - 1 small stick
- Cardamon / Ellakai - 2 pcs
- Cloves - 2
- Star anise - 1
- Jeera - 1 tsp
Method :
- First grind the ingredients listed under 'to grind' with little water to a fine paste, set aside
- Chop the Vegetables
- Heat oil in kadai, add the under 'to temper' and saute it for min
- Add the onion saute well until slightly browned
- Then add the tomatoes saute it well till it turns mushy
- Now add the chopped vegetables and mix it well
- Cover and cook the vegetables for 5 to 7 min
- Now open the lid , add the red chilly powder, coriander powder, turmeric powder and garam masala powder and mix it well
- Saute for 1 min
- Now add 1 glass water and salt and cover it for 5min
- Then add the coconut paste , 3/4 cup of water and allow it boil for 5 min in medium flame
- Finally add the chopped coriander leaves and turn off the flame
- Serve it hot with rotis.
