South Indian Brinjal curry recipe :

Simple brinjal curry .......


Ingredients :

  1. Brinjal - 5 
  2. Onion - 1
  3. Tomato -1
  4. Crushed garlic - 2
  5. Turmeric powder - a pinch
  6. Red chilly powder - 1 tsp
  7. Mustard seeds - 1/2 tsp
  8. Urad dal - 1/4 tsp
  9. Oil - 2 tsp
  10. Few curry leaves
  11. Salt to taste

Method :

  1. Take brinjal cut them into cubes and soak it in water
  2. Heat oil in a pan, add mustard seeds once its splutter add urad dal, crushed garlic and curry leaves and saute for 30 sec
  3. Now add the onions, fry till turns light brown color 
  4. Then add the tomatoes and pinch of turmeric powder and stir it for 2 min
  5. Add the brinjal and fry for a min
  6. And cover the brinjal with lid for 3 to mins
  7. Stir it well
  8. Now add the salt and red chilly powder and mix it well
  9. Sprinkle some water and cover and cook for 5 min
  10. Don't add too much of water
  11. Delicious brinjal curry is ready to serve
