Tomato rice recipe is popular South Indian style rice preparation....
Ingredients :
- Tomato - 3 Finely chopped
- Onion - 1 Finely chopped
- Garlic cloves - 10
- Green chilly - 2
To Temper:
- Oil - 3 tsp
- Mustard seeds - 1 tsp
- Urad dal - 1/2 tsp
- Jeera - 1 tsp
- Few Curry leaves
For roast and grind :
- Dry red chilly - 2
- Urad dal - 1 tsp
- Chana dal ( Split Bengal gram) - 1 1/2 tsp
- Coriander seeds - 1 tsp
- Asafoetida (Hing) - a pinch
Method :
- Dry roast the spice powders ingredients in low medium heat with stirring continuously
- Once roasted let them cool
- And grind into a fine powder
- Heat oil in a pan on medium heat
- Once oil hot add mustard seeds, once its splutter add urad dal, cumin seeds and curry leaves
- Now add the sliced onions and garlic
- Cook till onions become soft and light brown
- Then add the tomatoes and salt
- Cover and cook till the moisture evaporates
- Once oil separates from tomatoes ,then add the spice powder and cook for a min
- Take cooked rice and cool it down
- Then add the tomato thokku and mix it well
- Check salt and add if required
- Ready to serve
